Zucchini Jeon

애호박전, AeHoBakJeon


There are many different kinds of Korean jeon depending on what kind of vegetables, seafood, or meat you use. Hobak jeon is one of them. Hobak means zucchini and jeon means pancake. Jeon may be called a “pancake” in English, but the taste will be a little different from what you expect because it is not sweet. You can eat this as a snack or side dish. Try this simple and delicious dish someday. :D

Yield: 2 Servings

Short Korean Lesson: *^^*

  • AeHoBahk (애호박) = Zucchini
  • SuBahk (수박) = Watermelon

Main Ingredients

  • 1 Cup Flour
  • 1 Cup Water
  • 1 Egg
  • 1 Medium Size Zucchini
  • ½ Onion
  • 1 Red Hot Pepper
  • ½ tsp Salt

Dipping Sauce Ingredients

Directions

 

Julienne a zucchini, chop ½ onion very finely, and slice 1 hot red pepper thinly.

 

In a bowl, combine 1 cup of water, 1 cup of flour, 1 egg, and ½ tsp of salt. Mix everything together.

 

Add the vegetables into the batter.

 

Mix all of the ingredients together.

 

In a slightly oiled pan, pour 1 large spoonful of the batter and spread it to make a round shape.

 

Fry them until they become golden brown.

 

Serve this with dipping sauce. Thank you. :D

    These look amazing! My friend gave me one of his baby Korean squashes that he grew in his garden that I’ll certainly be using for it! Okay to substitute jalapenos for red hot peppers I assume?

      Yes, you can use jalapenos peppers..just make sure it can be too spicy for you.. so don’t use too much. thanks
