Spicy Mini Chicken TwoGim

미니 양념 치킨, MiNi YangNyeom ChiKin


Today’s recipe is Korean styled mini fried chicken with a sweet and mildly spicy sauce. The reason I use the name “mini” for this recipe is because I will use bite sized pieces of chicken breast for it. It is nice to eat since the pieces of fried chicken are small without the bone and skin. Try this delicious dish for a party or football game someday. :D

Yield: 2 Servings

  • JakEun (작은) = Small
  • Keun (큰) = Big

Chicken Ingredients

  • 1 Chicken Breast
  • ½ Tbsp Cooking Wine
  • 3 Pinches Salt
  • 2 Pinches Black Pepper
  • Some Oil for frying

Batter Ingredients

  • 1 Tbsp Cornstarch (Coating)
  • 1 Egg White
  • 4 Tbsp Cornstarch
  • ½ Tbsp Water

Sauce Ingredients

  • 2 Tbsp Ketchup
  • 2 Tbsp Honey or Corn Syrup
  • 1 Tbsp Cooking Wine
  • 1 Tbsp Finely Chopped Onion
  • 1 Tbsp Sugar
  • 1 tsp Sesame Seeds
  • 1 tsp Mayonnaise
  • 1 tsp Red Pepper Paste
  • ½ Tbsp Olive Oil
  • ½ Tbsp Minced Garlic
  • ½ tsp Sesame Oil
  • 1 Pinch Black Pepper

Directions

 

Cut 1 piece of chicken breast into half-inch cubes.

 

Mix 3 pinches of salt, 2 pinches of black pepper, and ½ Tbsp of cooking wine with the chicken. Set it aside for about 10 minutes.

 

Add 1 Tbsp of cornstarch to cover the chicken. That will help the batter stick better to the chicken.

 

To make the batter, combine 4 Tbsp of cornstarch, 1 egg white, and ½ Tbsp of water.

 

Put the chicken into the batter and mix.

 

To make the sauce, mix 2 Tbsp of ketchup, 2 Tbsp of honey or corn syrup, 1 Tbsp of sugar, 1 Tbsp of finely chopped onion, 1 Tbsp of cooking wine, ½ Tbsp of minced garlic, ½ Tbsp of olive oil, 1 tsp of red pepper paste, 1 tsp of mayonnaise, 1 tsp of sesame seeds, ½ tsp sesame oil, and 1 pinch black pepper.

 

Fry the chicken twice to make it extra crispy.

 

When the chicken pieces are light brown, remove them from the oil.

 

Fry them once more.

 

Fry until they become golden brown like this.

 

It is delicious without sauce too. hehe :D

 

Cook the sauce on medium heat. Once the sauce starts to boil, cook 1 more minute on medium heat.

 

Add the fried chicken into the sauce, and mix it well.

 

Add 1 tsp of sesame seeds. If you do not want sesame seeds, you can use chopped peanuts instead.

    Thank you for posting this! Ive had KFC from a korean bar back in Washington and it tasted just like this except hotter and when they served it it was like a whole mini hen. Anyway, I moved to Hawaii and was pretty happy that a local chain made KFC… until I tried theirs. It is too soupy and hardly spicey at all. It funny because their sauce smells just like this recipe but they taste comepletely different. Ive made the sauce a few times and given it to people. They love it as much as I do.

    It’s me again hehe… Wow, this is so delicious but i am a bit confusing about what to cook for my birthday: Japchae and korean BBQ chicken (just chicken breast in cubed) or maybe this mini fried chicken haha… that’s why I don’t have any idea what to choose… i am still contemplationg about this… but will decide it when I get a chance to try another korean foods haha

            By the way, I read reading the ingredients above like:

            * 2 Tbsp Ketchup
            * 2 Tbsp Honey or Corn Syrup
            * 1 Tbsp Cooking Wine

            * 1 tsp Mayonnaise

            >>>>> Same of the above that I already have: honey, corn starch, red pepper paste, mayonnaise, and ketchup (or if we called Tomato Sauce here in Australia)…

            And Should I need to buy Sesame Seeds, Sesame Oil, Cooking Wine (like I saw it here)? please let me know do I really need to add those or if it’s optional… i dunno hehehe

    Yes, i can’t eat my meal without something spicy. I am an indonesian, but i live in saudi arabia. I got to know abt korean food few years back when i started watching Arirang & KBS World TV. But just recently i can get some korean ingredients from my friend in Riyadh. Such a shame i haven’t find any in jeddah, which is close to the city i live. I’ll be visiting ur blog again for some other tasty recipes, thanks :) )

    I’ve been looking for korean fried chicken for some time, and i stumbled upon ur blog this morning. Tried this right away, and it was love on the first bite indeed! I added gochugaru for yet spicier sauce and apple cider vinegar to replace wine, it was so addictive, i finished the whole plate :p

    Hi, Aeris! Great Recipe. I have one question though why did you add two kinds of oil to the sauce? Sesame and Olive oil right? What was the purpose of the Olive oil? Does it bring more flavour? Thanks! More Power to you!

      Yes, both oils have own flavor.. oils give the sauce good texture also.. (I wonder if I can use the word “texture” here) make your sauce.. (fried chicken) look a little shiny…You can use normal oil instead of olive oil but I prefer olive oil..healthier and taste god. Sesame oil.. you don’t want to add too much for your food because it has storng flavor in it.. so if you put too much..other flavor from other ingredients will be hidden.. so use 2 kinds of oil here.. I hope my answer helped your curiosity a little. Thanks!!

    I made this aeri and it was SO GOOD! it had just the right spiciness and sweetness and all that good stuff. :) they ate ALL of it. woohoo!

    i didn’t make the batter for the chicken watery looking…i added water to the cornstarch until it resembled a really thick glue and added the egg white. it was REALLY crispy and it stayed crispy even with the sauce on it :)

I’m going to test more and get better recipe for batter later. What I can recommend you is.. use ice water for batter.. see if it helps a little.. Thanks !!!

    This dish surprised me a little. I generally don’t like sweeteners with meat, but I like this dish. It is a little sweet and spicy. The taste is not like any American flavor I tried before. It is worth making just to try a new flavor. ;)
