Haddock Jeon

생선 전, SaengSeon Jeon

In Korean cuisine, there are many different kinds of jeon (전). Jeon is basically slightly salted food (meat, seafood, fish, mushrooms, vegetables, etc.) that is covered with flour and eggs, or dip in batter and fried. Today, I’m going to show you a variety using fish. You can use any white-fleshed fish such as haddock, pollack, and so on. My favorite for this recipe is haddock, because it has less of a fishy taste. Since it is not deep fried, it will be healthier, and you will not lose the flavor with excessive grease. ;) Koreans usually eat this as a side dish. It is best to eat this right after you cook it.

Yield: 3 Servings

Short Korean Lesson: *^^*

  • SaengSeon (생선) = Fish
  • SaeWoo (새우) = Shrimp

Main Ingredients

  • 12 oz. Haddock
  • ⅓ Cup Flour
  • 2 Eggs
  • Some Salt
  • Some Oil for Frying

Directions

Slice the haddock into ¼ inch or thinner pieces. If the haddock is a little frozen, it is easier to cut.

Sprinkle some salt on each side of the sliced haddock evenly. If sized as in the picture, about 1 pinch of salt for each side will be enough. Set it aside for about 5 minutes.

Mix 2 eggs and 2 pinches of salt together.

Cover the salted haddock with flour.

Cover the floured haddock with the egg mixture. You can also add some finely chopped green onions into the egg mixture if you would like.

Add some oil (about 1 Tbsp) and place the battered haddock pieces in the pan.

Fry them until the fish is completely cooked and becomes golden brown.

Do you like fish? Then, try this Korean fish dish someday. Thank you! :D

A friend ordered too much haddock from our local German fishmonger so I offered to buy the extra 500 grams. My wife and I used your recipe and it made her day. She is also Korean and can be very fussy about freshness and proper preparation. Thanks!!
