Pickled Cucumber MuChim

Today, I will show you how to make a pickled cucumber side dish. You can make your own pickled cucumbers at home; you can also simply buy pickled cucumbers in a Korean or Asian store. This side dish is simple to make and it can be used in all four seasons; however, it is especially good during the summer. Someday, I will also post a recipe for homemade pickled cucumbers. As always, I hope that you will like this.

Yield: 1 Pint

  • OiJi (오이지) = Pickled Cucumber
  • SulTang (설탕) = Sugar

Directions

 

Cut 4 pickled cucumbers thinly. You will get about 2 cups.

 

Rinse them in cold water once.

 

Drain the water.

 

Squeeze out the water.

 

In a bowl, add the pickled cucumbers. Add 2 Tbsp of red pepper powder, ½ Tbsp of sugar, 2 Tbsp of sesame oil, 1 Tbsp of minced garlic, 2 Tbsp of finely chopped green onions, and ½ Tbsp of sesame seeds.

 

Mix everything together.

 

Wow, this is mouth watering! It looks delicious. For today’s lunch, I ate this side dish. I recommend that you try this: mix your rice with cold water, and eat it with this side dish. It is good for a hot summer day’s lunch when you feel lazy to cook a lot. Thanks! See you soon again.

    I just made this, and it came out sooooooooooo delicious. I didnt have korean pickled cucumber so i just used regular european ones and it was still so yummy!!! :D I think this is one of my favorites…i didnt even had to eat it with rice :D thank you for posting this! :razz:

    It’s very nice to meet you. Can you make this recipie without pickled cucumber? In other words, make the cucumber pickled from scratch nd then follow the recipie? Thank you very much for your videos and korean cooking, especially all the vegetable dishes. I am a vegetarian.

      Yes, you can make homemade pickled radish and use them for this recipe.. in the summer, if I get a chance, I’m going to make homemade pickled cucumber.. thanks

    I am enjoying your site greatly. Do you by any chance know how to make Spicy Tuna Sashimi? It is spicy yet sweet and I know for sure its a korean taste to it. I wonder if you know the ingredients to making the sauce.

      Nice to meet you!! Aha, I can guess what you want… at first, I can’t get fresh tuna for sashimi around here..and I don’t like raw fish much…but for the sauce part, there is similar food …using boiled squid..and some vegetables… I will post it someday… just you can use fresh tuna instead of boiled squid..and use same sauce.. it will give you same flavor.. spicy, a little sour and sweet flavor.. yum~~~ hehe.. thanks !!! :)

    I found your site by browsing online the other day. We are from Texas and living in Indiana now and can’t find any korean food anywhere. I am cooking for my family this weekend some recipes from your website. I have a few questions, I can’t find the red pepper powder?? What can I use?? We love kimchi and pickled cucumbers, but I am not sure what type of pepper powder to use???? Can you pleas help me!!!! Thanks again.

      I think.. since you live in USA.. you can order some Korean ingredients from Korean online grocery stores such as.. Hmart or assiplaza.. They have most things for Korean cooking. I will send you a link for Korean red pepper powder..

        hi! if u can’t find korean red pepper powder, u can use cayanne pepper instead. read it somewhere that it can be interchangable.

            oh… you’ve been tried cayanne pepper powder instead of Korean red pepper powder for Korean cooking?? and it worked ?? I’ve never used that before.. so I don’t know about that.. hehe thanks for your answering !!!

    Oooh…I love this dish!! I can’t wait for you to show us how to make the pickled cucumbers. My doctor told me that I have gained too much weight too fast. But all I can think about is food and coming to your site makes me more hungry!! =)

        Hi Aeri!

        I tried pickling cucumbers in soysauce one time from a recipe on the internet and for some reason, my cucumbers turned out mushy and not crunchy. I guess I just have to keep trying.

        I go for my 2nd ultrasound on the 29th. I can’t wait!! I know you are having a boy but….girls’ clothes are soooooo cute!!

          aha.. pickling cucumbers in soysauce.. I prefer vinegar instead of soysauce for my pickled cucumber.. anyway..
