There are so many different kinds of salad dressings in the world. What flavor do you like best? I like sweet and sour or fruity flavors. Recently, I learned how to make this delicious salad using Sempio’s Drinking Black Rice Vinegar – Pomegranate from my friend. It has various nuts, fruits, leafy greens, and cheese served with a sweet and sour dressing. I just love the flavor. So, I want to share the recipe with you today.
Yield: 2-3 Servings
Short Korean Lesson
- SeokRyu (석류) = Pomegranate
- AMonDeu (아몬드) = Almond
- 2 Handsfull (2 oz) Salad Mix
- ½ Cup Cherry Tomatoes
- ⅓ Cup Chopped Strawberries
- ⅓ Cup Chopped Mango
- ⅓ Cup Blueberries
- ¼ Cup Walnuts, Chopped
- ¼ Cup Almonds, Sliced
- ¼ Cup Dried Cranberries
- ¼ Cup Feta Cheese, Crumbled
- 2 Tbsp Sempio Drinking Black Rice Vinegar – Pomegranate
- 1 Tbsp Balsamic Vinegar
- 1 Tbsp Olive Oil
- ¼ tsp Sugar (Optional)
- ⅛ tsp Salt
Mix all the ingredients for the dressing in a small mixing bowl. If you do not have Sempio’s Drinking Black Rice Vinegar, you can use normal pomegranate, cranberry, or grape juice instead and increase the vinegar a little.
Obtain ¼ cup of chopped walnuts, ¼ cup of sliced almonds, and ¼ cup of dried cranberries. You can substitute other kinds of nuts and dried fruits that you like instead.
Obtain ¼ cup of crumbled feta cheese, ½ cup of cherry tomatoes, ⅓ cup of strawberries, ⅓ cup of mango, and ⅓ cup of blueberries. Chop the strawberries and mango into ½-inch cubes. Cut the cherry tomatoes in half. You can also use other kinds of fruit that you like such as pineapple, kiwi, pear, apple, peach, etc.
Obtain 2 handfuls of leafy greens. Place some of the leaves on a plate and put the nuts and fruit on top. This recipe is for 2-3 servings, so divide all the ingredients into 2 or 3 servings.
Drizzle 2 or 3 spoonfuls of salad dressing on each salad.
Lastly, sprinkle some feta cheese on top and serve.
Everything combines perfectly in taste and nutrition. I love my choices of fruits, nuts, cheese, and vegetables for this recipe. Among them, my favorite part is the feta cheese, cherry tomatoes, almond, and the mango (of course the dressing is good too). So even if you try to use some other ingredients, I highly recommend you try those 4 ingredients in your salad. Enjoy! 🙂
