We are healthy and kind of enjoying our unique opportunity to spend time together. I’m busy preparing 3 meals per day for my family, but it is always happy to see my family enjoy my food. I hope you all stay positive and healthy, and this difficult time will pass soon for all of us. Cheer up! For today’s recipe, I came up with something you can make when you don’t have many ingredients at home, which uses some potatoes. It is called GamJaChae Jeon in Korean. This Korean-style crispy and chewy potato pancake can be a great snack or side dish, especially when you want to make something very simple and quick. I do not have many ingredients right now, so my next post might be another very simple ingredient recipe. Hopefully, I can get some more Korean ingredients soon. Wish me a good luck. hehe

Short Korean Lesson
- EungGeupSil (응급실) = Emergency Room
- SuSulSil (수술실) = Surgery
- 2 Cups Yellow Potatoes (½ lb)
- 2 Tbsp Cooking Oil
- 1 Tbsp Korean Frying Mix or All Purpose Flour
- ¼-½ tsp Salt
- Some Green Onion (For Garnish)
Prepare 2 or 3 medium-sized yellow potatoes and peel the skin off. You can use any other type of potatoes you have.
Julienne the potatoes. It is important to cut the potatoes into even thin strips for this recipe, so if you have a vegetable slicer, use it. We need about 2 cups.
Season the potato strips with ¼-½ tsp of salt. If you are going to eat the Jeon plain, use ¼ generous tsp of salt, but if you are going to eat the Jeon with rice, use about ½ tsp of salt. Mix it together and set it aside for about 5 minutes.
After 5 minutes, you can see a little bit of liquid that came out of the salted potatoes like this. To help the potatoes stick together better and make it more crispy, add about 1 Tbsp of Korean frying mix or all purpose flour into the potatoes.
Mix them one more time and it’s ready to fry.
Drizzle about 2 Tbsp of cooking oil over a heated nonstick pan. Take out a big spoonful of potatoes with chopsticks and spread them out evenly into a round shape. Do the same thing for the rest of the potatoes. Fry them for about 6 minutes, or until they becomes nicely golden brown on medium.
After 6 minutes, flip them over and fry the other sides for another 6 minutes on medium. Then, we will get these beautiful crispy golden brown potato patties.
You can eat it as a Western-style breakfast meal, but if you want to make it taste more like Korean food, sprinkle some finely chopped green onions on top.
