Hi everyone! Have you ever played or worked outside in the scorching sun? After some sweating, you will want something to cool yourself down. Well, here is a recipe for you. Cold cucumber and sea mustard soup is a wonderful dish for this type of weather. This cold soup is so refreshing that it can bring your taste buds back to life. Since it is summer now, I hope you enjoy this flabbergasting dish!

The recipe starts at 0:19
- 3 Cups Water
- 2 Cups Cucumber (12 oz) (½ tsp Salt)
- ¼ Cup Dried Sea Mustard (0.3 oz) (1 Tbsp Vinegar, 2 tsp Sugar, ¼ tsp Salt)
- ⅓ Cup Onion
- 2 Tbsp Red Hot Pepper
- 2 Tbsp Green Onion
- 1 Tbsp Garlic
- 2 Tbsp Vinegar
- 2 Tbsp Sugar
- 1 Tbsp Sesame Seeds
- ½ Tbsp Soy Sauce
Obtain about ¼ cup of dried sea mustard. You can buy the precut kind like this.
Soak the dried sea mustard in water for a few minutes until it becomes soft.
Meanwhile, cut 2 cups worth of a cucumber into thin strips.
We also need to cut ⅓ cup of an onion, 2 Tbsp of red hot pepper, 2 Tbsp of green onion, and 1 Tbsp of garlic like this.
By now, the dried sea mustard will be soaked enough.
If there is still big chunks, you can cut them into your desired size with scissors.
Drain out the water and gently squeeze it.
Put the soaked sea mustard into a mixing bowl. Season it with 1 Tbsp vinegar, 2 tsp sugar, and ¼ tsp salt.
We also need to season the cucumber with ½ tsp of salt.
This is a special tip to make well seasoned delicious 오이냉국. Set aside the sea mustard and cucumber for at least 5 minutes.
After 5 minutes, put the cucumber and the rest of the vegetable ingredients into the bowl with the sea mustard.
Pour 3 cups of cold water into it and mix it all together.
Now season the cold soup one more time with 2 Tbsp sugar, 2 Tbsp of vinegar, and ½ Tbsp soy sauce. Mix it until the sugar dissolves.
For the final touch, sprinkle 1 Tbsp of sesame seeds over it and it is done.
We normally season it a bit strongly so that, when you add ice cubes later just before serving, the broath still has good flavor.
Store this in the refrigerator and serve it with some ice cubes whenever you are ready to enjoy it. 🙂
