Hi Aeri’s Kitchen friends! These cute mini rolls of Kimbap are made with just few ingredients. These are called DdaengCho Kimbap in Korean. Ddaengcho is a Korean word for very spicy small Korean hot peppers. Therefore, the unique thing about this Kimbap is that it is seasoned with a spicy sauce. In particular, I choose spam to add a nice savory flavor for this recipe. Since it is very simple to make, this can be a great lunch box or snack menu for kids.

Short Korean Lesson
- DdaengChho (땡초) = Small Hot Pepper
- MaeUn (매운) = Spicy
- 4 Cups Cooked Short Grain Rice
- 5 Sheets Dried Laver for Kimbap
- 6 oz Spam Light (½ can)
- ⅓ Cup Green Hot Peppers (Green Long Hot or Jalapeño Peppers)
- ¼ Cup Carrot
- 1 Tbsp Sesame Seeds
- 2 tsp Sesame Oil
- 1 Tbsp Soy Sauce
- 1 Tbsp Water
- ½ tsp Sugar
- ¼ tsp Vinegar
- ¼ tsp Garlic, Minced
Obtain about 6 oz of Spam, Light. Since we will season the rice with soy sauce, the spam shouldn’t be too salty. So, I highly recommend you to get the Lite version since it contains a lot less salt and fat.
We also need ⅓ cup green hot pepper and ¼ cup carrot. I couldn’t get the DdaengCho (Korean hot pepper) around here, so I used a green long hot pepper for this recipe.
Finely chop the hot pepper and carrot. Cut the spam into about ¼ inch by 3 inch long sticks. We need 20 sticks.
Fry the spam in a heated pan for about 8 to 10 minutes, or until all sides become golden brown. Every now and then, flip the spam around.
Mix together 1 Tbsp soy sauce, 1 Tbsp water, ¼ tsp vinegar, ½ tsp sugar, and ¼ tsp minced garlic in a sauce pan.
Cook it for 10 seconds after it starts to boil. We just want to make all the flavors combine.
This BiBiGo brand of KimBap Gim has a pretty good flavor, but it is not very strong to hold it all together when you cut the KimBap later.
Divide the 5 sheets into 4 to get 20 pieces in all.
Prepare 4 cups of freshly cooked short grain rice in a large mixing bowl.
Add 2 tsp of sesame oil and 1 Tbsp of sesame seeds.
Then add the chopped veggies and 1 Tbsp of the special sauce we made earlier. Personally, I think 1 Tbsp of the sauce adds the right amount of saltiness, but you can use as much as you want.
Mix the rice mixture all together. This rice mixture taste great to eat by itself, for an even simpler meal. hehe
By now, the spam will be beautifully cooked like this.
Place one piece of the dried laver on a flat surface.
Spread a thin layer of the rice mixture on the laver. It will be slightly less than ¼ cup. Leave little bit of space at the end of the laver.
Place one spam stick on the rice.
Roll it tightly, and press it together a little bit to make sure the KimBap forms a nice round shape and is tightly rolled.
Use the same process for the rest of the KimBap. For the final touch, brush little bit of sesame oil on the top surface of the KimBap and sprinkle some sesame seeds on top before serving. This step will make the KimBap look more appetizing and boast the flavor.
I served the KimBap with some plain mayonnaise to dip it in. I love the flavor combination of the salty, spicy KimBap with the mayonnaise. Please try it someday.
