potbingsu_09-

Today, I will introduce you to a Korean summer dessert. On my YouTube channel, I got the request for this dessert from many people. It was amazing how many people know about this Korean dessert and love it. I kept telling them to wait until the summer. As I promised, it is summer now and fortunately, I could find most of the ingredients for potbingsu in the Korean grocery store. Actually, I thought that at least one or two ingredients will be hard to get here, such as the crushed red beans and the special sticky rice cakes for potbingsu. My husband can tell you how happy I was when I saw them in the store. hehe … The ice with red beans, milk, fruits, rice cakes, and corn flakes give it a very good flavor. Of course, it is a very cool dessert for the hot summer days. Thanks !!!

Sweet Potato Dessert

Today, I will show you how to make “sweet potato dessert.” I tried to make this dish twice before, but couldn’t get it right – I cooked the sugar and corn syrup too long, and it became hard like hard candy. @.@ This time, I just slightly melted the sugar and it worked. Personally, I don’t like sweet potatoes or sweet things much, so it’s not my kind of food. However, somebody requested this dish, and finally I got a recipe from some experience. When it’s warm (right after making it), it tastes good, but once you reheat it, or it becomes cold, the taste is not that good. So, I highly recommend you eat this when it’s warm. Also, Korean sweet potatoes are different from American sweet potatoes in taste, texture, and color. They are more sweet, and more dry. Please try to find Korean sweet potatoes to use for this recipe.

Cake Crumb Sticky Rice Cakes

GyeongDan is a traditional Korean dessert. This type of GyeongDan is a modernized sticky rice cake. Traditionally, you would cover the sticky rice cakes with mung bean crumbs, black sesame seeds, soy bean powder, or something like that. However, this modern style sticky rice cake uses cake crumbs with honey and walnuts. If you don’t like soy bean powder or black sesame seeds much, like me, you will like this one. Since the honey and cake crumbs are sweet, you may not need sugar in the batter, but If you like sweet food, you can add 2 Tbsp of sugar in the batter. I served this one for my sister in law the other day, and she loved it. I was very happy. :D

Korean people have been eating many different kinds of rice cakes for dessert or snacks for a long time. As Westerners would eat cookies, pies, cakes, and candy, Koreans would eat rice cakes, fruits, and other Korean desserts. Nowadays, Korean people also eat many Western foods include desserts such as cakes, candies, cookies, and ice-cream. So, Korean rice cakes are eaten less than before. However, Koreans still eat rice cakes on special days (big events, birthdays, etc.) or traditional holidays. I’m planning to post more Korean rice cakes and desserts later. Anyway, chap_ssal_ddeok (찹쌀떡) is one Korean dessert that is mainly made with sweet rice flour and red bean paste. It is almost similar with Japanese mocchi. It will be best to make your own red bean paste at home, but you can buy a can of red bean paste from the store. This time I just used red bean paste from a can. (If I have an another chance to make this, I will try to make it myself. =D) I hope you will like this chewy and sweet rice cake dessert.
