This potato pancakes are an amazingly simple but delicious snack to eat. We only need 4-5 ingredients for this recipe. This dish has been requested many times. Interestingly, people who requested it saw this dish on the Korean TV program “Family Outing.” In that program, Hyo-ri Lee cooked this one day, and many people wanted to learn how to make those potato pancakes. So, I watched that program and made this recipe.

This is an another version of a Korean zucchini side-dish. My sister-in-law gave me a very fresh zucchini from her garden the other day, so I made this delicious zucchini side-dish. When I was a kid, I liked making a simple bibimbap with this side-dish whenever my mom made it. To make that simple bibimbap, mix some cooked rice, this side-dish, red pepper paste, kimchi, a fried egg, and some sesame oil to make a wonderfully simple bibimbap. :) If you are a vegetarian, you can skip the anchovies. And you can also skip the hot pepper if you don’t like spicy food.

This spicy spinach side-dish is one of the types of Korean spinach side-dishes. The combination of red pepper paste and soy bean paste give the spinach a unique and delicious flavor. This cold cucumber side-dish, 오이 냉국, is a very refreshing summer dish. It is delicious with both cooked rice and noodles. Cucumber and cold water seasoned with vinegar, sugar, and sesame seeds tastes cool and delicious. You can add soaked dried seaweed (미역=MiYeok=Wakame) also.

This is one of the various types of Korean soybean paste soup using spinach. Soybean paste is a very important ingredient in Korean cuisine. Except for the saltiness, there is some research that shows health benefits from soybean paste. You can adjust the amount of soybean paste for your dish depending on your taste or for your health. This is very easy to make, and of course it is delicious. So it’s good soup for your daily Korean meal. :D
