  2. Chloe

Hello Aeri!! I’ve been such a loyal fan of your website. It kept me through my hard times (cravings for korean food) when I was studying overseas alone.

Can I ask how should I keep unused gochugaru & dashida powder? Should I store them in fridge or can I leave it at room temperature?

    Thanks so much angel (: Take care. Have fun with your family over the weekends (;

    • Aeri Lee

      Hi Chloe,
oh.. my loyal fan.. thank you very much.. :D happy to meet you..
once you open the lid for gochugaru and dashida.. I usually put gochugaru in a container like.. big used Parmesan cheese container.. like this..
      http://aeriskitchen.com/2008/09/hot-pepper-powder/
keep it in a cabinet ..which means.. room temperature.. dashida.. that also will be kept at room temperature. thanks :D you have a good weekend too.

Thanks for your help! =D Nomulkamsahamnida.. Can I request for recipes on korean steamboat/hotpot? I tried the one with spam, hotdogs and ramen and another one was with beef and octopus.. *Drools*

I always eat it at a korean restaurant when I was back then studying.. Now that I’m working I hardly have the time .. So I want to cook at home and share the love with my family and friends (:

Help me with my cravings pls! ;P

        • Chloe

Which one is suitable for 짜장면 & 쫄면?
What is each of them for?
I tried to translate the terms but I still don’t understand. Sorry to trouble you..

  6. K

    Hello Aeri,

Thank you for bringing such great Korean recipes! I was looking for Japchae and found your video and have been looking through your videos ever since. I am going to try out the Japchae and Kimchi recipe very very soon :)

I am not sure how I can ask a question on your recipe and hope this is OK here.

I noticed you use microwave when making sweet rice flour mixture for kimchi and sweet rice cake with red bean. Is it possible to cook it on stove rather than microwave? I find i have more control over it when i cook it, but not sure how much / long to cook instead of microwave.

    Hope you can help!

    Thank you~

    • Aeri Lee

      hi K,
Nice to meet you. :D I hope you like my japchae recipe. About your question, you can cook the sweet rice flour on stove, but you really have to watch not to burn the bottom… it’s easy to burn.. so use thick nonstick pan…and keep stir it when you cook it. I can’t tell exactly how long it will take..but on my video.. you saw the consistency.. right ?? you cook until your batter becomes like that. thanks..

      hi Chang,

      • Chang

        • Aeri Lee

          hi Chang,

    Hello Aeri
Did I mention that your YukGaeJang recipe is just awesome. It is better than the restaurant. I have a question regarding your salting process when you make cucumber kimchi. Why do you salt the cucumber in hot salted water? All the recipe I have seen use just salt and no hot water.

    • Marilyn

      Hello Aeri,
I’m so glad I accidently found your blog. Last Spring my English/Irish/Scottish/Dutch nephew married a Korean born in Seoul who grew up in the USA. It’s been a culinary awakening. My nephew does most of the cooking for the couple but he is doing and learning Korean cooking and coaching me along to give it a try. So I’ll be looking at your site often and I do appreciate the Christian perspective as I also am a Christian.

      • Aeri Lee

        hi Marilyn,
Oh.. so you have a Korean family.. that’s cool~~ hehe.. I’m very happy to meet you. I hope you can try many delicious Korean food through my blog.. maybe I can see you more often here right ?? hehe thanks :D

    • Aeri Lee

      Hi david,
Oh~~ really ?? that’s great.. hehe better than restaurant.. ?? wow.. maybe I have to sell it on the street then.. jk.. Even you put salt for your cucumber kimchi.. it’s still become soft..and kind of not that good texture later… but if you add hot salt water .. it helps the cucumber keep some good texture to eat.. I hope my answer is good enough.. thanks

  9. david

I found your website through your page on Youtube. I am half Korean and although I grew up in a Korean household with all of its customs, I failed to watch my 엄마 cooking. So, now I am trying to catch up so I can cook Korean food for myself instead of going to the restaurants or home :) * Would you consider showing how to make Korean Dukk (rice cake with bean frosting?) I would greatly appreciate it! I cannot wait for your cookbook to come out esp since I can get most of these ingredients in Flushing, NY :) Yay!

    • Aeri Lee

      hi Laura,
Nice to meet you!!! wow you are a half Korean like my son ?? great.. Yes, I will add it to my list and post it someday.. hehe wow.. 15. ieat

    Hello!

I was wondering if you could help me identify some Korean Ingredients?

I can’t put up the photo here, but it is currently on my facebook page:

In particular I am trying to identify the amber coloured syrup which I think should be golden syrup and the bottle next to it which I think should be a sweet rice wine. Many thanks!

Is there an email which I can write to?

    • Aeri Lee

      hi ieat,
Nice to meet you.. I checked your facebook… so you are asking me.. what are they for ??? the amber coloured syrup is… called yoridang in Korean.. people use it instead of sugar or corn syrup.. maybe it supposed to be a little healthier than sugar or corn syrup… and the bottle next to it is.. yes..it’s cooking wine.. sweet rice wine.. You can send me e-mail.. blog@aeriskitchen.com
      thanks

  16. amyskitchen

    Hi Aeri -

I love your recipes! Can you post the toraji namul recipe you said you might “one day publish”? I love that side dish, but it is so hard to find a good recipe for it. Thank you! (and pls let me know when you’ve uploaded it???)

    • amyskitchen

oh, and it is hard to find the fresh, so if you could include instructions for dried, that would be nice, thank you :)

      • Aeri Lee

        hi amyskitchen,
Okay.. I will post it someday..hehe then.. which type you are talking about.. ?? spicy one..or non spicy one ??? I’ve posted the spicy version of doraji muchim before.. I guess it’s non spicy version you are talking..since you mentioned.. namul instead of muchim.. yep..I can’t find fresh one around here either..so it will be dried one if I post..just let me know what kind dish you meant.. thanks

        • amyskitchen

          Hi Aeri-

I was talking about the non spicy one. I just love it!

          Thanks for considering it!
          Amy

          • Aeri Lee

            hi amyskitchen,
I got it.. hehe thanks for your reply. Someday I will post it. :)

  17. Lynette

    Hi, Aeri.

I am so excited to have found your website. I am married to a Korean-American. I have been to a couple of how-to cook Korean food classes however, your instructions for cooking Korean food are by far less intimidating. I am inspired to try out these dishes, especially the jjam bbong as it is hard to find good jjam bbong where I live. I too, am Christian, so you are my “sister” in Christ! I am planning to make the Jap Chae for an international foods party for my Sunday school class in about a week or so. I will let you know how it turns out! :) Also, it seems to me that the most difficult part of cooking Korean food is the preparation (cutting vegetables, etc.). Would you agree? Is it okay to pre-cut the vegetables and freeze them so that they will be ready to use for all the delicious recipes you have posted?

    • Aeri Lee

      hi Lynette,
I’m very excited to meet you, sister..hehe It’s great your husband is half Korean. Jap Chae.. good choice !!! hehe.. I hope it turns out great..and people can enjoy your jap chae.. sounds like..that’s a very fun event.. anyway.. YES..I AGREE ~~~ Korean cooking needs work.. in Korea.. we don’t have frozen or.. can vegetables as Americans have here.. so I will say..it will be depending on food. some.. you can freeze ahead..but some not… if you ask me specific recipes..I can answer better.. I hope to see you more often. thanks

Hi, i came to your website by chance and im so glad i found it. I love korean food because my korean friend got me addicted to it.

I have a question on Kimchi red pepper powder. Do you have a brand that’s good because i can’t make the red pepper powder myself. What brand should i buy?

    • Aeri Lee

      hi Mang,
I’m so glad to see you here too. There is no specific brand I tell you to choose…just when you buy red pepper powder in a Korean grocery store, you will find red pepper powder for making kimchi.. they will tell that in English. Hope that you can find it easily. thanks ;)
