Fried rice is a very quick and easy meal that you can prepare at any time. Do you have leftover rice and vegetables in your refrigerator? Open your refrigerator and grab some scraps, and let’s make some delicious fried rice in few minutes. Among so many different kinds of fried rice, I choose shrimp fried rice today. In our house, I’m usually the one that likes to eat seafood the most, so I like it when I have a seafood buddy to share my delicious seafood dish with. Maybe if I make some delicious fried rice using shrimp, one of our boys will like it? Hopefully, if they like it, I can slowly introduce more of seafood to them. Hehe.. Anyway, so I cooked this shrimp fried rice and I was satisfied enough with the result to share it with Logan the other day. (Bryson was in school.) Did I hear “yes” from him? YES, I DID! He gave me thumbs up and I was very happy to eat this tasty shrimp fried rice with him for lunch. Now, he calls himself mommy’s seafood buddy. 😉 The fried rice gets savory flavor from the garlic and shrimp. It uses very few ingredients, all the flavor combination from each ingredient is great. In less than 30 minutes, you can cook delicious fried rice, just like from a restaurant. Try it someday. 🙂
Yield: 2 Servings
Short Korean Lesson
- ShinGyeong (신경) = Nerve
- GeunYuk (근육) = Muscle
- 2 Cups Cooked Short Grain Rice
- 16 Large Shrimps (½ Cup Chopped)
- 1 Egg (1 Pinch Salt)
- ¼ Cup Green Onions
- 3 Cloves Garlic (2 Tbsp)
- 2 Tbsp Cooking Oil
- 1 Tbsp Oyster Sauce
- 2 tsp Sesame Seeds
- ¼ tsp Salt
- 2 Pinches Black Pepper (Optional)
Obtain 16 large peeled uncooked shrimps, ¼ cup worth of green onions, and 3 garlic cloves (2 Tbsp).
Chop the shrimps into ¼ inch chunks. Finely chop the green onions and slice the garlic cloves thinly.
Break one egg and whisk it gently with 1 pinch of salt.
Obtain 2 cups of cooked short grain rice.
In a heated nonstick pan with 1 Tbsp of cooking oil, add the garlic. Fry for about 30 seconds on high.
Put the shrimps into the pan and fry for 1 minute on high.
Reduce the temperature to medium-high. Then, add the cooked rice.
Season the rice with 1 Tbsp of oyster sauce and ¼ tsp of salt. Mix everything together and fry for another 3 minutes.
3 minutes later, push the fried rice to one side and make some space for cooking the egg mixture. Add 1 Tbsp of cooking oil on the empty space.
Pour the egg mixture on the oil.
Quickly stir the egg mixture to make scrambled eggs. Break the egg into the desired size. Then, mix the egg into the fried rice and fry the rice for 2 minutes.
When the rice is almost done frying, sprinkle the chopped green onions and 2 pinches of black pepper, and then finish cooking. Black pepper is optional. (Personally, I prefer to not have black pepper in my shrimp fried rice.)
Turn off the heat and sprinkle 2 tsp of sesame seeds on it.
It looks very delicious. Like many other Korean dishes, it tastes even better if you eat this fried rice with any kind of Kimchi. 🙂 Since I had success feeding this to Logan today, my next goal will be clams.
