Potato Jeon

감자전, GamJa Jeon

Potato pancakes are an amazingly simple but delicious snack to eat. We only need 4-5 ingredients for this recipe. This dish has been requested many times. Interestingly, people who requested it saw this dish on the Korean TV program “Family Outing.” In that program, Lee Hyori cooked this one-day, and many people wanted to learn how to make those potato pancakes. So, I watched that program and made this recipe.

Yield: 8 Pancakes

Short Korean Lesson: *^^*

Video Instructions

Main Ingredients

  • 2 Medium Potatoes (12 oz)
  • ¼ tsp Salt
  • Some Green Onion, Red Hot Pepper (to Garnish)
  • Some Oil for Frying

Directions

Prepare 2 medium sized potatoes. They should be about 12 oz total.

Peel the potatoes and chop them into 1-inch cubes. To prevent the potatoes from turning brown, soak them in water.

Grind the potatoes until they become a very fine paste. You can use either a mixer or a hand grinder.

Drain the potato mixture to separate the liquid from the potato. Cover the ground potato with plastic wrap.

Set aside the potato water for about 15 minutes.

For the optional garnishing and flavoring, chop some green onions, along with some red and green hot peppers.

About 15 minutes later, the potato starch will be at the bottom of the bowl, and the liquid will be on top. Remove the liquid and save only the potato starch.

Add the potato starch to the potato paste.

Add ¼ tsp of salt and mix well.

In a generously oiled and heated pan, add about a spoonful of potato mixture and make it round.

Place some green onions or peppers on the pancakes.

Fry them until both sides of the pancakes become golden brown.

Garnish the pancakes with green onions and red peppers. Enjoy! :D

I had the same problem above where my potatoes turned a darkish/purplish color. I don’t think it has to do w/ how long you blend it since I barely got started and already it changed color. I even took them out of the water and placed some on the cutting board ready for the food processor and it started to change colors before my very eyes. Do I need to add salt or something to stop that discoloration?

Overall, they turned out ok but the color is not white but a dark purplish color. I was using Russet Potatoes instead of the ones in the recipe.

    Your advice is appreciated.

hi i need help! i failed trying to make this twice!!
how long did you blend it for? i take a really long time and the potato paste already turns briwnish/purplish in the blender, not yellow like yours! is my mixer the prob or does the type of potato matter?
also, when im draining the potato mixture, some of the potato mixture gets through too, do you just throw it away with the water after 15min?
Also, how much oil do you add!

Sorry for bombarding, and thanks! :)

Well, I’m not the author… but when my mom makes these, she actually very finely grate the potato instead of blending them, some uses food precessor. You could try that and see if it works for you. You maybe blending it too long, destroying starch structure. And for the potato mixture getting through, it’s just judgement call. My mom just throws them away with potato water since it’s only very little. She also pours very generous amount of oil almost comes 1/2 centimetre up the side of the pan. She says it’s the only way it’s good. Even if you don’t want to use that much I think it’s a good idea to let the oil completely coat the pan in a layer.
