Fried rice is good for a meal for many reasons. It is quick and easy to make and it is very delicious. Plus, there are so many different kinds that you can make using whatever you have in your refrigerator. It is great as one-dish meal when you add meat and vegetables in it. So, today I will show you an another great way to enjoy fried rice using Korean radish kimchi. I just posted a delicious radish kimchi recipe, so use it. 🙂

Main Ingredients
- 1 Cup Cooked Short Grain Rice
- ½ Cup Well Fermented Radish Kimchi
- 2 Bacon Strips
- ¼ Cup Green Onion
- 1 tsp Garlic (1 Clove)
- 1 Egg (1 Pinch Salt) (Optional)
- Some Seasoned Dried Laver (Garnish)
- ½ Tbsp Cooking Oil
Seasoning Ingredients
- 1 Tbsp Radish Kimchi Broth
- ½ tsp Soy Sauce
- ½ tsp Sesame Oil
- ½ tsp Sesame Seeds
- ¼ tsp Sugar
- 2 Pinches Salt
Directions
You will need ½ cup of well fermented radish kimchi. It should be well fermented or sour radish kimchi to get the best result. Check my recipe for how to make it.
Roughly chop the radish kimchi into smaller pieces. Cut 2 bacon strips into ½ inch pieces. Finely chop ¼ cup worth of green onions and 1 garlic clove (1 tsp). Set aside 1 Tbsp of radish kimchi broth.
Get 1 cup of cooked short grain rice. You can use fresh or leftover cooked rice, or any other kind of rice.
Preheat a nonstick pan with ½ Tbsp of cooking oil and put the chopped garlic and green onions in it. Fry for about 30 seconds on medium-high. This will make the fried rice more flavorful.
Then add the bacon and fry for about 2 minutes, or until it becomes crispy on medium-high.
After 2 minutes, add the radish kimchi into the pan.
Then, add the rice and mix it with the radish kimchi.
Add more of the seasoning: 1 Tbsp radish kimchi broth and ¼ tsp sugar.
Slowly add ½ tsp of soy sauce and 2 pinches salt. You can adjust the saltiness with soy sauce or salt. You can use just one, or both of them, as I did to get the right amount. Mix everything together and fry for about 5 minutes on medium.
Meanwhile, fry 1 egg with 1 pinch of salt. You can make a dippy egg like the one pictured in this recipe, or you can fully cook it. 🙂
After 5 minutes, the rice will be a little crispy and smell wonderful. Turn off the heat and sprinkle ½ tsp of sesame seeds and drizzle ½ tsp of sesame oil on top.
Stir it one more time and serve.
Put all of the fried rice on a serving plate or bowl.
Add the fried egg, shredded seasoned and roasted dried laver, some finely chopped green onions, and sesame seeds. All the flavor you need for a meal is right there on your plate, so you can just enjoy it without any extra sides. Enjoy! 🙂
