Cucumber ChoJeolIm

오이 초절임, OI ChoJeolIm

This is a simple cucumber dish for garnishing mul naengmyeon or bibim naengmyeon, although you can use it as a side dish or you can use it in other noodle dishes too. The sweet and sour flavor in this cucumber dish gives extra flavor to the main dish. :)

Yield: ⅔ Cups

Short Korean Lesson: *^^*

  • Hae (해) = Sun
  • Dahl (달) = Moon

Main Ingredients

  • 1 Cup Cucumber
  • ½ tsp Salt
  • 2 tsp Sugar
  • 2 tsp Vinegar

Directions

Cut about ⅓ of a cucumber in half lengthwise, and then slice the two halves to get 1 cup.

In a bowl, add the cucumber and ½ tsp of salt. Set it aside for about 15 minutes.

After 15 minutes, rinse the cucumber in cold water twice and drain the water.

Mix the salted cucumber, 2 tsp of sugar, and 2 tsp of vinegar.

That was simple, right? Keep this in the refrigerator and use it whenever you serve your noodles. Try it someday. :)

    This sounds tasty, indeed.
But I wonder, how long I can store this in the fridge?!

Thanks for your great recipes (I love your ginger date tea!),
