
Gyeranmli is a rolled up fried egg. This type is made with fish cakes, and it is called “gyeranmali (어묵 계란말이).” It is easy and delicious and can be used in a Korean lunch box. Someday, I will post more Korean lunch box dishes.

Main Ingredients
- 1 Cup Fish Cake Pieces
- 6 Eggs
- 4 Green Onions (½ Cup)
- ¼ Cup Zucchini
- 2 tsp Red Hot Pepper
- ½ tsp Salt
- Some Oil for Frying
Directions
Finely chop 1 cup worth of fish cakes. It is important to cut the fish cake very finely so that your egg will be easier to roll later. There are different shapes and sizes of fish cakes in a Korean or Asian grocery store. You can use any kind of fish cakes.
In the same way, finely chop ½ cup worth of green onions, ¼ cup worth of zucchini, and 2 tsp worth of red hot pepper.
In a mixing bowl, combine the chopped ingredients, 6 eggs, and ½ tsp of salt. Mix everything together.
Pour the egg mixture into a generously oiled and heated pan. I used a 12-inch nonstick pan.
Fry it on medium-high. Once the surface of the egg mixture is half cooked, begin to roll the egg starting with about half an inch.
After you are done rolling the egg, fry it until both sides become golden brown.
Cool it down for about a minute before cutting. This makes it easier to handle the egg and also helps with the cutting. Cut the egg into ½-inch slices.

I tried to make this today, and I couldn’t roll it
Everytime I’d start to roll the egg, the uncooked egg from the surface would spill out on the sides and create a new layer of egg underneath the rolled part Dx

Adding chopped fish cake into omellete is brilliant – and I love spring onions. Now I use duck eggs to make omellete b’cos it taste better (duck have to swim so they produce near-free-range eggs compared to farmed chicken).
