Short Korean Lesson
- SiGeumChi (시금치) = Spinach
- SoGeum (소금) = Salt

Main Ingredients
- 3 Handfuls Fresh Spinach (1 Cup Boiled Spinach)
- 7 Cups Water (1 tsp Salt)
- ⅛ tsp Salt
- 1 tsp Sesame Oil
- 1 tsp Minced Garlic
- ½ Sesame Seeds (Garnish)
Directions
Prepare about 3 handful of fresh spinach (½ lb). Remove any bad parts and wash them good.
Add 1 tsp of sea salt in 7 cups of boiling water. The salt helps the spinach to retain its color.
Then, add the spinach to the boiling water and cook for 30 seconds on high. For the best results, the spinach should be cooked for a short time at a high temperature.
After 30 seconds, quickly drain the hot water and rinse the spinach in cold water several times. This step again helps to retain the spinach’s green color.
Squeeze out the water. You will get about 1 cup of cooked spinach.
Add the cooked spinach, ⅛ of salt, 1 tsp of sesame oil, and 1 tsp of minced garlic into a mixing bowl.
Mix everything together and sprinkle ½ tsp of sesame seeds before serving.
Enjoy!

This side-dish looks delicious. The only thing I think is a pain about spinach is preparing a huge amount just to get a tiny bit out of it. I often have to trim off the end of the stem one leave at the time. Because the spinach in the supermarket are only available in precut packs.
But anyways, it’s delicious :D.
