Today, I will show you how to make a very popular Korean chicken dish, DakDoriTang. It is chicken and vegetables cooked with a spicy sauce to give it great flavor. Depending on your tastes, you can add or reduce the amount of red pepper powder and red pepper paste. My husband and I enjoyed this dish very much the other day. I hope you will like this too.

- DoMa (도마) = Cutting Board
Video Instructions
Main Ingredients
- 1 Whole Chicken (4 LB)
- 2 Cups Onion
- 2 Cups Potato
- 1 Cup Carrot
- 3 Green Onions
- 1-2 Hot Peppers (Optional)
- 1½ Cups Water
For Chicken
- 1 Tbsp Cooking Wine
- ¼ tsp Salt
- ⅛ tsp Black Pepper Powder
Sauce Ingredients
- 5 Tbsp Red Pepper Paste
- 3 Tbsp Red Pepper Powder
- 2 Tbsp Soy Sauce
- ½ Tbsp Cooking Wine (or Water)
- 1 Tbsp Sugar
- 1 Tbsp Corn Syrup
- 2 Tbsp Minced Garlic
- 1 tsp Sesame Seeds
- 1 tsp Sesame Oil
- 1 Pinch Black Pepper Powder
Directions
Cut the chicken into 2×2 inch pieces. Don’t remove the skin, fat, or bones because that gives it good flavor.
Marinate the chicken with 1 Tbsp of cooking wine, ¼ tsp of salt, and ⅛ tsp of black pepper powder for at least 10 minutes.
Combine 5 Tbsp of red pepper paste, 3 Tbsp of red pepper powder, 2 Tbsp of soy sauce, ½ Tbsp of cooking wine, 1 Tbsp of sugar, 1 Tbsp of corn syrup, 2 Tbsp of minced garlic, 1 tsp of sesame seeds, 1 tsp of sesame oil, and 1 pinch of black pepper powder.
Mix the ingredients.
Cut 2 cups of onions, 2 cups of potatoes, 1 cup of carrots, 3 green onions, and 1 or 2 hot peppers into big chunk (1 or 1½ inch cubes).
Place the chicken in a big pan.
Add the potatoes, onions, and carrots on top of the chicken.
Pour the sauce on top.
Then pour 1½ cups of water on it.
While it is cooking, occasionally stir it so that all of the ingredients get covered with the sauce. Cook it for 30 to 35 minutes on high, or until the chicken and potatoes are completely cooked.
Reduce the temperature to low and add the green onions along with the hot peppers. Cook 2 more minutes and then turn off the heat. If you don’t want your food too spicy, skip the hot peppers.
Serve this dish with rice and other Korean side dishes. You can also pour some of this on top of rice for a main course in the same way as curry and rice. Enjoy this delicious Korean food.

This is looks really good! I’ve found that when using chicken in stews or, it is best to NOT to use bonelesss chicken. the bones in the chicken make the sauce more flavorful and the chicken keeps it shape alot better, rather than falling apart and disappearing into the stew. 🙂

We usually cook on the stove.. but there are some Korean food that needs to be cooked for a long time on low temperature. I think you can use slower cooker for this recipe too.. 🙂 Thanks !!

I do have a question for the stew recipe: When I place the marinated chicken in the pan, do I also put the left-over marinate sauce (i.e. the 1 Tbsp of cooking wine, ¼ tsp of salt, and ⅛ tsp of black pepper powder) in the pan together or do I just discard it?

It was normal size whole chicken… Usually Cornish hen is.. very small chicken.. and other chickens are mostly similar size.. ^^

Aeri, what is the equivalent to corn syrup if you use sugar instead? Let’s say your recipe calls for two tablespoons? How much sugar would you use in its place? I don’t really like sweetness in my food, but I know this is common for Korean food to be somewhat sweet. How sweet are most of the recipes on your site that call for corn syrup or sugar? Thank you!

If you don’t like sweet flavor in your food.. just adjust the sweetness on your taste.. so if the recipe calls 2 Tbsp.. start from half amount of it.. 1 Tbsp..taste it..and add more if it needs.. it’s hard to tell how sweet they are..because.. to me.. it is just normal..but the word “normal ” can be too personal opinion.. ^^

Yes, you can use sugar instead.. just start from.. smaller amount (1/2 to 2/3) of sugar instead from the corn syrup amount in the recipe..and then.. depending on your taste.. adjust the sweetness.. thanks

I made this last night (with a few variations)and it was YUMMY 😀 😀 :grin:. I did not use red pepper powder as my 2 year old would be eating it. I also used 6 tablespoons of Gochujang instead of 5. And instead of sugar I used honey. Great recipe! Thanks

Yes, since the kimchi will have spicy and salty flavor.. just follow the recipe and do not use all the sauce.. but adjust the amount later.. like use 1/2 or 2/3 of the sauce for cooking with your kimchi.. then later taste it to see if you need more sauce in it or not. 🙂
